Easy Sausage Carbonara

Makes 2 servings
Total cooking time: 15 minutes onlyingredients:
Dried tagliatelle
3 sausages
1/2 bunch of fresh Italian parsley (1/2 oz)
1 large egg
1 ounce of parmesanInstructions:
Cook pasta in a saucepan of salted boiling water according to package directions, and then drain them by reserving a cup of cooking water. Meanwhile, sauté the sausage meat from the skins, then with wet hands, quickly form 18 equal balls. 4 cloves of garlic

4 oz boneless skinless chicken breasts (2 pieces total)
2 thick slices of whole wheat bread with seeds (2 1/2 ounces each)
1 clove of garlic
1 lemon
1 3/4 ounces of arugulaInstructions:
Place the chicken breasts between two large sheets of parchment paper and rub with the base of a large nonstick frying pan to flatten them to about half an inch in thickness. Tear the bread food processor, then peel, chop, add garlic and blitz in a fine breadcrumbs. Pour the breadcrumbs over the chicken, pat roughly on each side, then cover with paper and beat again to pound the crumbs in the chicken and flatten further. Put the pan on medium heat. Cook the chicken in a tablespoon of olive oil for three minutes on each side, or until it is crisp, golden and well cooked.Slice, plate, season to perfection with sea salt and black pepper, sprinkle with lemon arugula and serve with lemon wedges to squeeze.
