Easy Sausage Carbonara

Makes 2 servings
Total cooking time: 15 minutes onlyingredients:
Dried tagliatelle
3 sausages
1/2 bunch of fresh Italian parsley (1/2 oz)
1 large egg
1 ounce of parmesanInstructions:
Cook the pasta in a saucepan of salted boiling water according to the instructions on the package, then drain them by reserving a cup of cooking water. Meanwhile, sausage meat out of skins, then with wet hands, quickly form 18 equal balls. Roll and coat with black pepper, then cook over medium heat in a non-stick frying pan with half a tablespoon of the olive oil until it is be golden and cooked well, stirring regularly, then turn off the heat.Remove finely the parsley, the stems and the rest, beat with the egg and a trickle of pasta cooking water, then grate finely and incorporate most of the Parmesan cheese. Mix the drained pasta in the sausage dish, pour the egg mixture and stir for a minute off the heat (the egg cooks gently in the remaining heat). Relax with a good drizzle of reserved cooking water, season to perfection with sea salt pepper and finely grate the rest of the Parmesan cheese.

Quick stir-fried steak

Makes 2 servings
Total cooking time: 16 minutesingredients:
4 cloves of garlic
Piece of fresh ginger 1 1/2 ”
12 ounces of asparagus
4 1/2 oz of beef tenderloin (2 total)
2 tablespoons black bean sauceInstructions:
Peel and cut very finely garlic and ginger. Put in a large, nonstick frying pan cold with 1 tablespoon of olive oil, and place on medium heat, stirring regularly. Once crisp and lightly browned, remove it from the pan and set aside, leaving the garlicky oil behind. Line up the asparagus tips and cut the woody ends, then add them to the hot pan. Season the steaks with sea salt and black pepper, add them next to the asparagus and increase the heat. Cook for just three minutes, turning everything over regularly. Add the black bean sauce and a tablespoon of red wine vinegar for a minute, so you will get medium-sized steaks. You can also cook as you please. Cut the slices of steak into slices, put them on a plate, and then spread them over crisp garlic and ginger.

Crispy Garlicky Chicken

Total cooking time: 20 minutes ingredients:
4 oz boneless skinless chicken breasts (2 pieces total)
2 thick slices of whole wheat bread with seeds (2 1/2 ounces each)
1 clove of garlic
1 lemon
1 3/4 ounces of arugulaInstructions:
Place the chicken breasts between two large sheets of parchment paper and rub with the base of a large nonstick frying pan to flatten them to about half an inch in thickness. Tear the bread food processor, then peel, chop, add the garlic and blitz in a fairly fine bread crumbs. Pour the breadcrumbs over the chicken, pat roughly on each side, then cover with paper and beat again to pound the crumbs in the chicken and flatten further. Put the pan on medium heat. Cook the chicken in a tablespoon of olive oil for three minutes on each side, or until it is crisp, golden and well cooked.Slice, plate, season to perfection with sea salt and black pepper, sprinkle with lemon arugula and serve with lemon wedges to squeeze.
