Perseverance and transmission

Le Refuge des Gourmets was born in 1989.
Florence and Jean-Marie Chanove, driven by the values ​​of work and perseverance, have spent three decades at the head of this veritable institution which has just celebrated its 30th anniversary. It is on the occasion of this anniversary that Chef Jean-Marie Chanove officially hands over to his son Hubert.

Passion and education

Hubert grew up in Machilly. Falling very small in the pot, he flourished as a family in the restaurant.
Becoming a chef was obvious to him. After studying at the Lycée François Bise in Bonneville, then at the Savoie Léman hotel school in Thônon, he decided to take off and perfect his knowledge with great French starred chefs like Michel Troisgros in Roanne or Jean Sulpice in Val Thorens.

Back to basics

In 2014, after 6 years of gastronomic experiences, Hubert made the choice to return to Machilly.
It was then that cooking with 4 hands began, with his father Jean-Marie. Thanks to this work of consistency and precision, they will win their first star in 2016.

A new story begins

In 2019, the final takeover takes place between the father and the son.
Hubert and Fanny, his partner, start writing a new page in the history of the Refuge des Gourmets.
With a cuisine guided by nature, by its original terroir and a perfect knowledge of the product, something tells us that the Refuge des Gourmets will live great tasting adventures for a long time!
