Today, Fabrice invites the children into the kitchen by revisiting two classics with them … And by attacking the ham-mash (published in “Eat Directions in Occitania”) and pizza (for the site naturally-flexitarians.fr), the confined Toulouse chef did not lack ideas.

Ham-mash

For 4 people, 100 g cooked ham from the South West, 200 g potato, 3 eggs, 100 g flour, 100 g breadcrumbs, 100 g grated emmental cheese, Salt / pepper.

Preparation. Cook the skinned potatoes for 20 minutes in boiling salted water. Peel them and mash them with a fork. Add the emmental with 1 egg, salt and pepper. In another, beat the 2 eggs with a pinch of salt and pepper. In a third, place the breadcrumbs. Bread your cromesquis. Flour them and remove the excess flour. Dip them in the egg, then in the breadcrumbs.

Dip them again in the egg and then in the breadcrumbs. Book. Immerse them in the hot frying bath for a few minutes until they are golden. Drain on paper towels and keep the croquettes warm until ready to serve.

Pizza flower

Ingredients. A pizza dough, 10 cl of tomato sauce, 100 g of ground beef, 3 cl of olive oil, 50 g of grated emmental cheese: 50 g, salad, cherry tomatoes if you have it.

Preparation. Roll out the dough very finely using a rolling pin and flour. Spread the dough with the tomato sauce and add the grated cheese and then the minced meat. Put the oven to preheat at 180 ° C for 10 minutes. Then roll the dough on itself, tightening well. With a knife, cut the roll into not too thick slices. Place them on a baking sheet and bake them. At the end of cooking, add grated emmental cheese to the pizza and place the oven in the grill position for 5 minutes. Place the flower-shaped slices on a bed of salad, then add some cherry tomatoes.
